"Palets bretons" (biscuits) with salted butter caramel

Fall for this simple recipe, so easy to cook! Palets with a smooth salted butter caramel...


For the palets
350 g of salted butter
150 g of sugar
350 g of flour

For the caramel
40 g of salted butter
100 g of sugar
2 tablespoons of water
6 tablespoons of single cream

The palets

Whisk the softened butter, add suger and stir until the dough is white. Add the flour, stir and split the dough in two.
Flour the work surface, roll each dough until the rolls are 5 centimer in diameter then let it rest in the fridge for an hour.
Take the rolls out, cut them into 2 centimeters thick slices, then place them into stainless steel circles. Put in the oven heated to 180 °C for about 20 minutes. Check the cooking and let it cool.


In a small saucepan, bring the sugar and water to the boil until the sugar browns. Take it off the fire, add the butter and stir energetically, add the cream. Bring it again to the boil a few minutes until the caramel becomes smooth.

You can serve this breton palets with vanilla ice cream and/or cooked apples, the whole being topped with salted butter caramel. A real treat!
