Sweet Crêpes: how to make your own

sweet crepes

Go for sweet crepes!

Makes around 30 crêpes

500 g plain flour
200 g sugar
3 eggs
1 pinch of salt
50 g lightly salted butter, melted
1 litre of whole milk
Optional flavouring (such as vanilla or rum)

Tip the flour into a mixing bowl and make a well in the centre.
Add in the sugar, salt, the flavouring and the eggs.
Mix together with a little mil until you get a smooth batter.
Add in the melted butter and mix gently.
Gradually introduce the rest of the milk, stirring, to obtain a smooth, rich batter.

To check the consistency, it should lightly coat a spoon when dipped into the mixture.

You can leave the batter to 'rest' for an hour, or you can begin immediately to make your crêpes.

Many French natives love their crêpes just as they are, which is referred to as 'nature', but they are also delicious with sugar, with chocolate, jam, honey, or a squeeze of lemon juice. You can be as adventurous as you like - try caramelised apple slices or banana and chocolate with a serving of vanilla ice-cream, perhaps even a crêpe flambée... let your imagination be your guide!
